Quick and Easy “Potato Stew”
I’ve been a vegetarian for over two decades, but as you know, I am lazy when it comes to cooking! Here’s a recipe that is fast to make, and fast to clean up after. If you’re as lazy as me, try serving it with some nice frozen garlic bread!
Quick and Easy “Potato Stew”
Ingredients:
1 10 3/4 ounce can of potato soup
Milk (10 ounces)
1 can mixed vegetables or 1 package frozen vegetables*
1/2 small onion, minced (optional)
1/2 cup shredded cheddar or american cheese (optional)
Salt and Pepper to taste
(serves 3; this recipe is easily doubled or tripled)
- Prepare soup according to directions on the can;
- Stir in vegetables; and heat until hot.
- If you add the onions, cook on low heat until onion are clear.
- If you add the cheese, let the cheese melt into the soup, and keep a little to the side to garnish the soup when you serve it.
*Use what you like–I usually add peas and carrots because they are vegetables that my husband will actually eat, but sometimes I throw in some broccolli or corn, too! If I have leftover vegetables from the night before, I toss them into the Potato Stew.

I’ve been a vegetarian for more than twenty years, but I’m a lazy vegetarian! So, I’m continually looking for shortcuts and easy ways to make meals.
In this section I’ll post vegetarian recipes, tips on eating vegetarian, and products that I’ve discovered. Sometimes it will be less of a recipe and more of a “short cut” to get lunch or dinner on the table, but it will always be something that I’ve tried myself, would eat again, and most importantly, would and do serve to family and friends! If you have great recipes and tips to share, please send them to me and I’ll do my best to include them in this section.
